The Queens Chopped Salad

This is an all time favorite salad of mine! Its all the best savory items packed into a chopped salad. It’s quite unique but stay with me here. All these flavors together are fire. Without further ado... the queens chopped salad! 👑

1 serving.


Ingredients:

8 oz chicken breast raw, 6 oz cooked (1 leaner)

1 tbsp white balsamic vinaigrette (1 healthy fat)

1/4 cup finely chopped tomato (1/2 green)

1/4 cup finely chopped fresh jalapeño, seeded (1/2 green)

2 cups romaine lettuce (2 greens)

1 finely chopped pickle spear (1 snack)

1 tbsp finely chopped red onion (1 condiment)

2 tbsp reduced fat parmesan cheese (1 condiment)

1/8 tsp salt (1/2 condiment)

1/4 tsp pepper (1/2 condiment)


Directions:⁣

1. Preheat grill to 400 ⁣

2. Pound chicken until it’s an even thickness ⁣

3. Spray chicken with cooking spray and season with salt and pepper⁣

4. Grill chicken for about 5-7 minutes on one side, flip, grill for about 3 more (depending on thickness)⁣

5. Remove chicken from the grill and let rest for about 5-10 minutes⁣

6. Assemble salad with lettuce, tomato, onion, jalapeño, pickles, parmesan cheese, and dressing. Toss salad.

7. Top with sliced grilled chicken and enjoy!
