This was so good that I had it two nights in a row 🙃. It’s a ton of food and would be a fab option for splitting your lean and green. You can sub in any veggies you like!
8 oz 95-97% lean ground turkey raw, 6 oz cooked (1 leaner)
1/4 cup cubed zucchini (1/2 green)
1/4 cup chopped asparagus (1/2 green)
1/2 cup fresh spinach (1/2 green)
3/4 cup kale (1.5 green)
1 tbsp pesto (1 healthy fat)
1 tsp minced garlic (1 condiment)
1/8 tsp salt (1/2 condiment)
1/4 tsp pepper( 1/2 condiment)
2 tbsp reduced fat feta (1 condiment)
Heat large nonstick pan to medium high.
Brown turkey in skillet. Drain fat, remove turkey from skillet and turn heat down to medium.
Spray pan, add zucchini, asparagus, and garlic. Sauté for a few minutes until veggies cook through. Add salt and pepper.
Add turkey back into skillet and combine ingredients.
Turn off heat and stir in spinach, feta, and pesto. Keep stirring until spinach is wilted.
Add massaged kale to a bowl and top with skillet mixture! Enjoy!
