9 oz raw white fish - I did grouper (6 oz cooked) (3/4 Leanest)
1/3 bag of taco flavor quest chips broken up as bread crumbs(1/6 Leaner)
1/2 tsp tajin seasoning (1/2 Condiment)
1/4 tsp salt (1/2 Condiment)
2 tsp lime juice (1 Condiment)
1 tbsp chopped cilantro
1 cup cauliflower rice (2 Greens)
1/4 cup chopped red cabbage (1/2 Green)
1/4 sliced jalapeño (1/2 Green)
1.5 oz avocado (1 Healthy Fat)
2 tbsp lite sour cream (1 Healthy Fat)
1. Season raw fish with tajin and salt. Then spray with olive oil and coat in quest chip bread crumbs.
2. Place on small piece of parchment paper and cook in air fryer on 400 for 10 minutes. Flip and cook for another 2-5 depending on size of fish.
3. Sauté cauliflower rice in nonstick pan. Once it starts to get soft, add lime juice and chopped cilantro. Stir until a nice rice consistency.
4. Assemble bowl with cauliflower rice on the bottom. Top with crispy fish, cabbage, avocado, jalapeño and sour cream.
