This is such an easy lean and green to split. It would also be a great option to pack in a cooler for a summer picnic 🧺 or evening on a boat 🚤.
7 oz canned tuna
4.575 oz mini cucumber - about 2-3 mini cucumbers once scooped (2.5 greens)
1/4 cup chopped celery (1/2 green)
1/4 cup lite mayo (2 healthy fats)
1 tbsp minced onion (1 condiment)
1 tsp lemon juice (1/2 condiment)
1/2 tsp dijon mustard (1/2 condiment)
1/2 tsp old bay seasoning (1 condiment)
1. Mix mayo, mustard, old bay seasoning and lemon juice in medium bowl. 2. Next, add in tuna, celery, and onion. Mix until smooth.
3. Slice your mini cucumber in half lengthwise. Scoop them out with a small spoon. 4. Weigh your cucumbers so they’re about 4.575 oz (2.5 greens).
5. Stuff cucumber boats with tuna salad. Enjoy!
